Michael Symon’s Take On the Viral Pesto Eggs Dish Includes This Important Tweak That Makes All the Difference

If you’re deep into FoodTok then you’ve likely seen one or two (or 15…) videos about pesto eggs, a recipe that instructs you to cook your fried eggs in pesto rather than butter. Not only does this make your eggs a bit healthier, but the garlic and basil flavor really packs a punch when paired with a creamy yolk. But Chef Michael Symon has a few nitpicks about this viral recipe and decided to put his own spin on it to make it even better than the OG pesto eggs.

“I’ve been watching these pesto egg videos, and I have to say, I don’t completely approve,” Symon said in a recent video posted to Food Network’s Instagram. “They wanted to fry their eggs in pesto [but] pesto is something that should not be cooked. So I’m going to finish with the pesto to stop my scrambled eggs from overcooking.”

He first starts by toasting a bit of bread in a pan with melted butter, adding a halved avocado next to it to create a bit of caramelization. While the bread and avocado do their thin in the pan, Symon whisks together a couple of eggs to scramble them, then seasons the scramble with Aleppo, salt, pepper, and. a pat of butter to slow the cooking process.

Once the bread and avocado come out of the pan, Symon adds more butter to the pan and turns the heat off before adding in his whisked eggs. Once he does, he continues to scramble them with the fork until they’re almost fully cooked. But before they’re done, Symon spoons in a bit of his premade pesto to cool the eggs just as they finish cooking. “And that is a proper pesto scramble for breakfast,” Symon said.

Although both methods look delicious, Symon’s pesto eggs will pack a bit more punch because the pesto isn’t cooked and therefore the flavors are still bold and raw. You can try both recipes to see which one you like best, but no matter how you like your pesto eggs, a little pesto in the morning can ultimately change the breakfast game for good!
