Giada De Laurentiis’ Marinated Salumi Sandwich Is the Ultimate Make-Ahead Beach Day Lunch

And if you love to bring a picnic lunch along on your days out, then this salumi sandwich recipe from Giada De Laurentiis is about to become your new favorite make-ahead treat. It’s loaded with delicious Italian flavor and can be customized to be exactly what you want it to be.

Salumi, which is the word for Italian antipasto meats like prosciutto, mortadella, guanciale, coppa, and pancetta, pairs perfectly with De Laurentiis’ pesto recipe which starts with putting almonds and garlic in a food processor. Coarsely chop before adding your basil leaves, cheese, and lemon zest. Then finish the pesto with a drizzle of olive oil and puree until the pesto becomes a smooth paste.

To assemble the salumi sandwich, for which De Laurentiis likes to use spicy coppa and fonocchiona, you first slice your ciabatta bread in half and remove s bit of the softer insides to make room for the ingredients. Spread the pesto evenly over both halves of the bread, then layer on the coppa, finocchiona, and mozzarella on the bottom half of the ciabatta.

Create a light salad by tossing together arugula, fennel, lemon juice, and oil, and top the meats with this mixture. Add the top of the bread back on and wrap the entire sandwich tightly in plastic wrap. Allow it to sit in the fridge for at least an hour before slicing it into smaller sandwiches and serving.
