Bite into sunshine when you try Martha Stewart’s delicious cake recipe. It’s filled with unique ingredients that’ll instantly transport you on a tropical getaway — and it’s perfect to make this summer.
The lifestyle guru and chef shared a photo of her amazing Banana Sheet Cake with Passion-Fruit Frosting on Instagram, which looks amazing with passionfruit juice drizzled over the icing on top. This fruit is most often found in Brazil, Ecuador, Colombia, Peru, Mexico, Australia, Zimbabwe, and Kenya, so it’s no surprise that tasting it will make you think of lounging by refreshing ocean water and enjoying a warm summer breeze.
“This banana-and-passion-fruit sheet cake takes you to the tropics by way of Italy, where the vine-ripened fruit is used in sodas and all kinds of desserts,” Stewart captioned the post. The recipe has a cup of mashed ripe banana, which creates a taste with “more moisture and a slightly denser cake” than most recipes will make.
“Passion-fruit juice goes into the cream-cheese frosting for a fresh and naturally intense taste, and adds a pastel tint to this gorgeous creation,” she added.
The recipe, which was originally published in the January/February 2021 issue of Martha Stewart Living, mostly calls for ingredients you would expect to find in a typical cake, plus ripe bananas, sour cream, and cinnamon. Start by mixing the dry ingredients together, then slowly add an egg-and-sugar mixture to the bowl, beating to combine. From there, add butter, bananas, and more. Once the batter has been combined, pour it into a 9-by-13-inch or 8-by-12-inch pan and bake.
Make the frosting by beating cream cheese, passionfruit juice, and other ingredients in a bowl until it’s “smooth and fluffy.” Spread it over the cooled cake, then drizzle with leftover passionfruit juice and some pulp. Passionfruit has a slightly tart taste and combined with a sweet banana in a sugary cake, this is a fabulous recipe!
